As a Scot, I feel the need to correct you on just what haggis is. Haggis is not sheep intestine. It is sheep heart, liver, and lungs mixed with onion, oatmeal, and spices. Traditionally it is cooked in a sheep stomach. There is no “intestine” in it at all. Also, it’s quite good.
You guys don’t get out much.
This is an incomplete list of flavors a group of friends and myself have attempted in the past 22 years (There’s an annual ice cream social. We starting using liquid nitrogen over a decade ago. )

As an American transplanted to Scotland who loves haggis, I feel the intense, pedantic need to clarify what it is. It’s made with sheep’s heart, lungs, and liver, which are chopped up, mixed with spices and oats, and cooked in a sheep’s stomach (you don’t eat the stomach, though). No intestines harmed in the making of.
Basically, it’s chopped liver ice cream with some other offal added in.
That’s not to say that chopped liver ice cream is normal.
I have had maple-bacon ice cream and it was delicious.
